We just shipped a non-custodial escrow mode and wanted to put the mechanics in front of this community specifically, because "trust us" isn't an answer here. How it works: it's a standard Monero 2-of-3 multisig. Buyer, seller, and operator each generate one key. Any two of the three sign to move funds.
